A few months ago I found this quick and easy snack that ALL my kids love. Every time I make these, they never last more than a day or two. What I love about these energy bites is that they are small enough to pop in your mouth when you are in a hurry and they get you over the munchie-hump before your next meal. Add the fact that almost all the ingredients are healthy and I’m one happy momma!

Ingredients

  • 1 cup oatmeal
  • 1/2 cup peanut butter (or other nut butter)
  • 1/3 cup honey
  • 1 cup coconut flakes (I never add these)
  • 1/2 cup ground flaxseed
  • 1/2 cup mini chocolate chips
  • 1 tsp vanilla

Directions

Add all the ingredients to a bowl and mix. Let is sit in fridge for 30 minutes to firm up and then roll into balls. Store in container and keep in fridge. Easy Peasy!

Got the HUGE honey container from Sam’s. I use honey in a lot of recipes so I needed it in bulk. The little cup towards the front? It’s got my own homemade vanilla in it. {I dipped into the stash a few months early since I ran out.}

After mixing, put in the fridge for 30 minutes so it will be easier to roll into balls.

If you have children who have nothing to do, let them roll the mixture into little balls. Store in air-tight container in fridge.
